The "Perfect" Plate
Salmon, kale, and quinoa on one end. Cotton candy with a side of gummy worms on the other. Nutrition is a spectrum, and the interesting part, the part with variety and your grandmother's lasagna in it, is the middle.
The Short Version
- Nutrition is a spectrum, not a pass or fail test. The salmon plate is near the top, the cotton candy plate is near the bottom, and gasoline with asbestos holds last place.
- If perfect nutrition were the only goal, you would find the perfect plate and eat it forever. Perfect and variety cannot coexist.
- The real skill is knowing what the middle looks like: a solidly good plate, and the slightly better version of what you already like.
