Ingredients

  • 2 1/4 cup whole-wheat elbow noodles (10 ounces)
  • 1 tbsp canola oil
  • 1 lb ground turkey
  • 2 1/2 cup riced cauliflower
  • 2 cup chopped red bell peppers
  • 1 1/2 cup chopped yellow onions
  • 5 clove garlic, minced
  • 1 (15 ounce) can no-salt-added tomato sauce
  • 1 1/2 tbsp light brown sugar
  • 1 tbsp reduced-sodium Worcestershire sauce
  • 2 tsp dry mustard
  • 1 1/4 tsp kosher salt
  • 1 tsp ground pepper
  • 1 tsp cider vinegar
  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Preheat oven to 400°F. Cook 2½ cups pasta according to package directions. Drain and set aside.
  2. Meanwhile, heat 1½ tablespoons oil in a 12-inch cast-iron skillet over high heat. Add 1 pound ground turkey; cook, stirring to crumble, until lightly browned, 4 to 5 minutes. Stir in 2½ cups cauliflower and the chopped bell peppers, chopped onions and minced garlic; cook, stirring often, until the vegetables are softened, 5 to 7 minutes.
  3. Add 2 cans tomato sauce, 1 tablespoon brown sugar, 1 tablespoon Worcestershire, 1 tablespoon mustard, 1¼ teaspoons salt, 1 teaspoon pepper and 1 teaspoon vinegar. Bring to a boil over medium-high heat. Reduce heat to maintain a lively simmer; cook, stirring occasionally, for 2 minutes. Stir the cooked pasta into the turkey mixture.
  4. Sprinkle the casserole evenly with 1 cup cheese. Bake until the cheese is melted and the casserole is bubbling, 5 to 7 minutes.
