Ingredients

  • 1 (0.8-ounce) package freeze-dried strawberries
  • ¾ cup whole-milk plain yogurt
  • 2 tbsp vanilla extract
  • 1 tsp grated lemon zest
  • ¼ teaspoon ground pepper
  • ¼ teaspoon ground cardamom
  • ⅛ teaspoon salt
  • 3 cup quartered hulled medium strawberries

Instructions

  1. Line a large baking sheet with parchment paper. Place 1 package freeze-dried strawberries in a zip-top plastic bag. Crush with a rolling pin into a fine powder.
  2. Combine ¾ cup yogurt, 2 tablespoons vanilla, 1 teaspoon lemon zest, ¼ teaspoon pepper, ¼ teaspoon cardamom and ⅛ teaspoon salt in a medium bowl; stir well. Add 3 cups quartered strawberries; stir to coat.
  3. Using a fork, lift one strawberry quarter from the yogurt mixture, tapping off excess yogurt. Use a wooden pick to slide the strawberry onto the prepared baking sheet. Repeat with the remaining strawberries, spacing them apart. Sprinkle with the strawberry powder.
  4. Freeze, uncovered, until firm, at least 2 hours or up to 24 hours. Let stand at room temperature for 5 minutes before serving. Recipe developed by Marianne Williams
