Ingredients
- 1 pound chicken cutlets
- 1 1/4 teaspoons everything bagel seasoning, divided
- 2 tablespoons extra-virgin olive oil, divided
- 1 cup halved and sliced onion
- 1 tablespoon water
- 3 cups coarsely chopped spinach
- 1/3 cup white wine or low-sodium chicken broth
- 1/4 cup sour cream
- 2 ounces cream cheese, cut into small pieces
Instructions
- Sprinkle both sides of chicken with 3/4 teaspoon everything bagel seasoning. Heat 1 tablespoon oil in a large skillet over medium heat. Add the chicken; cook, turning once, until browned and just cooked through, 6 to 8 minutes total. Transfer to a plate.
- Add the remaining 1 tablespoon oil, onion and water to the pan. Cook, stirring, until mostly softened, about 3 minutes. Add spinach; cook, stirring, until wilted, about 1 minute. Whisk wine (or broth), sour cream and the remaining 1/2 teaspoon everything bagel seasoning together in a glass measuring cup. Add to the pan along with the cream cheese, stirring until melted and heated through, 3 to 5 minutes. Return the chicken and any accumulated juices to the pan and turn to coat.
