Beef Gyros with Tzatziki Sauce

Juicy beef patties sizzle until browned, then tuck into warm pitas with tomato and onion while a cool, creamy tzatziki of yogurt, cucumber, dill, and garlic drapes over every bite. The tangy sauce softens the spiced meat, creating a tender, handheld meal that tastes bright and satisfying.

Ingredients

  • 1/2 of a 6-ounce carton plain fat-free Greek yogurt
  • 1/2 cup shredded, seeded cucumber
  • 1 1/2 tsp red wine vinegar
  • 1 1/2 tsp snipped fresh dill
  • 1 clove garlic, minced
  • 1/4 tsp kosher salt
  • Nonstick cooking spray
  • 1 cup chopped onion
  • 2 tbsp water
  • 1 lb lean ground beef (95% lean)
  • 1 egg
  • 1/4 cup dry whole-wheat bread crumbs
  • 4 tsp dried oregano, crushed
  • 2 tsp dried marjoram, crushed
  • 3 clove garlic, minced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 low-carb pita bread rounds
  • 3 medium roma tomatoes, sliced
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup thinly sliced red onion
  • 1/2 cup crumbled reduced-fat feta cheese (2 ounces)

Instructions

  1. Prepare Tzatziki Sauce: In a small bowl stir together Greek yogurt, cucumber, red wine vinegar, dill, minced garlic and salt. Cover and chill up to 4 hours until ready to serve.
  2. Prepare Beef Gyros: Preheat oven to 325 degrees F. Line a 9x5-inch loaf pan with parchment paper; coat paper with cooking spray.
  3. In a food processor combine the 1 cup onion and the water; cover and process until smooth. Press pureed onion through a fine-mesh sieve to remove excess liquid; discard liquid. Return onion to food processor. Add the ground beef, egg, bread crumbs, oregano, marjoram, garlic, salt and pepper). Cover and process until mixture forms a paste.
  4. Lightly press meat mixture into prepared loaf pan. Place loaf pan in a 13x9-inch baking pan. Pour enough boiling water into baking pan to reach halfway up sides of loaf pan. Bake 35 to 40 minutes or until done (160 degrees F) (see Tip). Drain off fat. Cool 10 minutes. Remove; cut into slices about 1/4-inch thick.
  5. Fill pita bread with meat, tomato, cucumber and red onion slices; top with cheese. Serve with Tzatziki Sauce.
